Red Bare Bean Caviar

Enjoy on tortilla chips, as a side to your breakfast sausage and eggs, or top a taco with this flavorful “caviar.” It’s so versatile you can even top a green salad with a spoonful!

Prep time:  20 minutes
Yield: 3 cups



1 10-oz bag of Red Bare Beans
6 diced Roma tomatoes
1 diced red bell pepper
1 diced medium red onion
2 seeded and finely diced jalapeno peppers
1 diced large avocado
1 15-oz can of corn
1/2 bunch chopped cilantro
4 Tbs fresh squeezed lime juice
1/2 cup light Italian dressing
4 pressed medium sized garlic cloves
1 tsp salt (or to taste)


In a large bowl combine Red Bare Beans, tomatoes, red onion, bell pepper, jalapeno, avocado, corn and cilantro. Stir in lime juice, Italian dressing, garlic and salt. Gently mix and serve. Keeps well in refrigerator.
