Spanish-Style Bare Beans Garbanzos

 

This is delicious as an easy side dish, full of flavor, nutrients, protein and fiber. Or serve as a hearty meat-free main dish with crusty bread. This dish is big on flavor but warm and cozy too. In their rich sauce, these beans especially compliment a roast leg of lamb with their deep garlicy flavor.

 

Ingredients:

1/4 cup olive oil
1 diced medium onion
3 minced garlic cloves
1/2 tsp dried oregano
1/2 tsp ground cumin
1/4 tsp smoked paprika
20 ounces Bare Beans Garbanzos
1 cup marinara sauce salt and pepper to taste

Garnish:

1/4 cup fresh minced parsley and the juice from one fresh-squeezed lemon

Directions:

Saute onions in olive oil for about 5 minutes, do not brown.

Add garlic and other spices and cook another 2 minutes.

Add Bare Beans garbanzos, marinara, and stir.

Cook at a low simmer, stirring often until thickened.

Taste. Season with salt and pepper.

Serve and top with a squeeze of fresh lemon and sprinkle of minced parsley.
