Chickpea Salad Ingredients

- 1 10 oz. bag Garbanzo Bare Beans (chickpeas)
- 1 stalk diced celery
- 2 thinly sliced green onions
- 2 ½ Tablespoons mayonnaise (or your favorite vegan alternative)
- 2 teaspoons lemon juice
- 1 teaspoon celery seed
- 8 slices bread or 4 croissants
- Salt and Pepper to taste
- Arugula (or lettuce of choice) for a crunchy topping
This chickpea salad sandwich is super versatile which allows you to make swaps with any of your favorite vegetables. You can add-in sliced cherry tomatoes, red onion, cucumbers, bell peppers, white or green onion for a variety of flavor combinations. We challenge you to make it your own!
How to make Garbanzo Bare Beans Salad Sandwiches

In a medium bowl, add in the 10 oz. bag of Garbanzo Bare Beans, and smash with a fork or cut repeatedly with a sharp knife (you can also use a food processer, just work in quick pulses so you don't end up with hummus).

Combine the chickpeas with the thinly sliced celery and green onions, mayonnaise, lemon juice, and celery seed. Add kosher salt and fresh ground pepper to taste. Taste and salt until the flavor pops! If the salad is dry, you can simply add more mayonnaise.

Assemble the chickpea salad sandwich: Spread salad onto bread of your choice (especially good on a croissant.) Can add a crunchy lettuce or garnish of choice.
