Ingredients
- 2 Tbsp extra virgin olive oil
- 1 Medium white onion, diced
- 2 Jalapeno peppers, seeded and diced
- 3 Garlic cloves
- 1 Tsp salt
- 1 Tsp ground cumin
- 1/2 chili powder
- 30oz Black Bare Beans
- 1/2 Cup (loosely packed) roughly chopped fresh cilantro
- 2 Tbsp fresh lime juice
- 3-4 Tbsp water
- Optional: Fresh cotija cheese for topping
Instructions
- Heat oil in a skillet over medium heat. Add onion and jalapeno peppers, then saute for 3-4 minutes until soft.
- Add the garlic, salt, cumin, and chili powder. Stir for another minute.
- Transfer sauteed ingredients to a food processor. Add black beans, cilantro, lime juice, water.
- Blend until smooth. Add additional spices and lime juice to taste. Add water until you have desired consistency.
- Place dip in a serving bowl, top with chopped cilantro and cotija cheese if desired. Enjoy!
Tip: Best if made ahead and refrigerated so flavors can marry!
