Ingredients

  • 2 Tbsp extra virgin olive oil
  • 1 Medium white onion, diced
  • 2 Jalapeno peppers, seeded and diced
  • 3 Garlic cloves
  • 1 Tsp salt
  • 1 Tsp ground cumin
  • 1/2 chili powder
  • 30oz Black Bare Beans
  • 1/2 Cup (loosely packed) roughly chopped fresh cilantro
  • 2 Tbsp fresh lime juice
  • 3-4 Tbsp water
  • Optional: Fresh cotija cheese for topping

Instructions

  1. Heat oil in a skillet over medium heat. Add onion and jalapeno peppers, then saute for 3-4 minutes until soft.
  2. Add the garlic, salt, cumin, and chili powder. Stir for another minute.
  3. Transfer sauteed ingredients to a food processor. Add black beans, cilantro, lime juice, water.
  4. Blend until smooth. Add additional spices and lime juice to taste. Add water until you have desired consistency.
  5. Place dip in a serving bowl, top with chopped cilantro and cotija cheese if desired. Enjoy!

Tip: Best if made ahead and refrigerated so flavors can marry!
