
Ingredients
- 1tbs olive oil
- 1 green bell pepper
- 2-3 cloves of garlic minced
- 1/2 white onion diced
- 1 bunch cilantro chopped (save some for topping)
- 32oz chicken broth
- 14oz diced tomato
- 10oz Rotel tomatos
- 15oz corn (drained)
- 1/2 cup shredded chicken
- 10oz black Bare Beans
- 10oz pinto Bare Beans
- 1 packet taco seasoning
Toppings
- Sour cream
- Lime juice
- Tortilla chips
- Shredded cheese
- Cilantro chopped
Instructions
- Pour olive oil into pot over medium heat. Add onion, let cook for 2 minutes, then add green bell pepper. Cook until veggies are tender.
- Add garlic, saute until fragrant. Pour in chicken broth and let simmer for 1 minute.
- Add diced tomato, Rotel, corn, chicken, black Bare Beans, pinto Bare Beans, handful of cilantro.
- Add in packet of taco seasoning, stir and let soup come to a boil.
- Serve with desired toppings and enjoy!
