Mediterranean Garlic Parmesan Navy Beans

The most delicious 15-minute navy bean recipe you will try! Bursting with flavor and subtle spice, this dish is packed with protein and can be served as a side or an appetizer!

Ingredients :

  • 2-3 garlic cloves, minced
  • Extra virgin olive oil
  • 20 oz Bare Beans navy beans
  • 1 cup cherry tomatoes, halved
  • Salt and black pepper
  • 1 teaspoon Aleppo pepper (substitute with 4:1 ratio of paprika and cayenne pepper)
  • 1/2 teaspoon cumin
  • 1 cup fresh parsley, chopped
  • 1/4 cup shaved parmesan cheese
  • 1/4 cup grated romano cheese
  • Juice of 1/2 lemon
  • Baguette or pita bread (optional to serve)

Directions :

1. In a large pan, warm 2 tablespoons extra virgin olive oil over medium heat. Add the garlic and cook briefly, tossing regularly until golden.

2. Add Bare Beans navy beans and 1/2 cup water. Season with salt, pepper, and the spices. Add tomatoes. Cook, stirring occasionally until warmed through (about 10 minutes).

3. Optional : slice and toast baguette or pita bread.

4. Stir in the parsley, cheeses, and lemon juice.

5. Finish with generous drizzle of extra virgin olive oil. Serve immediately on toasted baguette slices, pita bread, or by itself as a side dish.
