
Grinder Inspired Bare Beans Salad
This is an easy and filling salad that can be a meal on its own or fresh side dish. Inspired by the grinder sandwich popular in New England, this satisfies the hungriest crowd without filling up on carbs from the bread. With plant-based protein from the beans you can make it all vegetarian and/or vegan by omitting the meat and cheese and it will still fill you up.
Salad:
1 chopped red onion
2 chopped bell peppers
1 bunch minced fresh parsley
10 oz Bare Beans Garbanzos
10 oz Bare Beans Navy Beans
1/2 cup chopped banana peppers
1/2 lb chopped peppered Genoa salami
Dressing:
1/4 cup red wine vinegar
1/2 cup olive oil
2 tsp oregano
juice of 1 lemon
Options: small chunks of cheese, ham or other meat of your choice.
Instructions: Dice and mince fresh ingredients and add to a bowl.
Whisk dressing ingredients in a small bowl. Pour dressing over fresh ingredients and gently toss to serve. This makes a great meal or can be served as a side dish.
