Easy Bean Quesadilla

These easy and delicious quesadillas are a quick week night meal or snack anytime. They are packed with flavor and adding Bare Beans gives them a protein punch with plenty of fiber and nutrients to satisfy your entire family.

 

Ingredients

1 small chopped yellow onion
1 tablespoon olive or veg oil
1/2 small can Hatch green chilis
½ teaspoon garlic powder
Salt and pepper to taste
1 cup grated Colby Jack cheese or cheese of your choice
1 small can sweet corn, drained
1 10-oz bag Black Bare Beans or a combination of Bare Beans equaling 10 oz.

Instructions

Sauté onions in oil on medium to low heat in a large frying pan until translucent, add spices, beans, corn and chilis, stir until mixed and heat through. Turn heat to low. Remove onion mixture from pan and place into a bowl.

8 flour tortillas

4 tablespoons butter

Add 1 tablespoon butter to pan and slowly heat while assembling the quesadillas.

Lay one tortilla in buttered pan, add one quarter of the onion mixture and ¼ cup of cheese, spread across tortilla. Place a second tortilla on top and cook until slightly browned and cheese starts to melt. Carefully flip tortilla to brown the second side. When both sides are nicely browned, and cheese is melted place onto a plate and cut into pie shaped pieces. Repeat three more times with the remaining ingredients. Can garnish with sour cream, guacamole, fresh lime wedges, avocado.
